A recent study published in the journal Nature Food, led by Danish, Italian, and NASA scientists, forecasts a global decrease in processed tomato supplies by 6% within the next 30-40 years due to climate change. This decline is attributed mainly to elite tomato varieties used in ketchup, pizza sauces, and tomato paste, which are more vulnerable to outdoor cultivation. The research concentrates on the United States, Italy, and China, which account for 65% of global processed tomato production. The models suggest a significant drop in production across all three countries, with farmers in southern California and northern Italy, home to many processing plants, facing the most severe challenges due to increased temperatures and water scarcity.
