Mushroom market: Ukraine faces a shortage of quality substrate for growing oyster mushrooms In Ukraine, the market for growing oyster mushrooms has encountered a critical shortage of quality substrate, which directly affects yield and pricing. This was reported by the head of the All-Ukrainian Association of Mushroom Growers, Mykola Lelet, as reported by Kurkul. He noted that after the closure of the company "Veres" in 2023, the industry is effectively dependent on two main producers, while importing compost from Europe remains economically disadvantageous due to complex logistics. Currently, only the companies "Agaris Miko Ukraine" and "Svit Solomy" are engaged in the industrial production of substrate. The main problem for producers is the complexity of the technological process, which depends on weather conditions, as fermentation occurs outdoors. In particular, the frosty winter of 2025-2026 made it impossible to prepare a quality base, which led to a drop in yield for some farmers
